With more than 20 years’ experience in over 15 restaurants in Japan, Chef Takeshi is someone who is a master of the intricacies of Japanese cuisine, having even obtained a license to serve the dangerous pufferfish, or fugu, delicacy during his culinary career. It takes years of intense training to become fugu-certified as one small error in its preparation could lead to a fatal accident. Naturally reserved, Chef Takeshi is happiest when he is in the kitchen preparing thin slices of fish for sashimi dishes. As such, the chef knows his way around a knife – dexterity and hand/eye coordination are part and parcel of the job.
