When you meet him, you realise that Samplings gets its warmth in part from Chef Val, who never fails to give you a smile. In line with the expansive nature of this year’s MIGF theme, he says he has challenged himself and put his all into his six-course Festival menu. And as a chef who started out as a kitchen apprentice, you know he hasn’t reached such heights without constantly pushing himself. But to aim big and high, you must start slow and small. After all, towering structures are nothing without their basic building blocks. For Chef Val, it all comes down to the ingredients and the ability and imagination of the chef to craft and match them perfectly together. “In my cooking, the ingredient is the most important,” he says.
