The baby of his household, Chef Fong grew up watching his mother prepare meals for the family. “I would always sit beside her in the kitchen and help her with the preparation,” he recalls fondly. His brand of contemporary Western food is grounded in the astute understanding that in today’s globalised world, food is inherently fusion and the modern diner is both exposed to and willing to undergo new, exciting experiences. That’s why his festival menu is tailored to both local and foreign palates. Take his main, a pot-roasted black cod with chickpea puree: it’s a true blend of Western and Mediterranean flavours.
