Chefs Federico and Chef Fabio are but simple Italian men who love simple Italian food made from simple Italian ingredients. It’s just our luck that they do a fine job of making it too. The pair have been with Marini’s on 57 since its opening three years ago and have always constructed their cooking around seasonal Italian ingredients and products. Chef Federico, whose travelling and creative spirit led him to become a chef, has nothing but praise for his protégé. Chef Fabio, on his part, has fond memories of cooking with his mother and grandmother every Sunday for the family. It’s this merge of worldly and homely flavours between the two chefs that translate into a dynamic kitchen combination.
