Despite her small stature, this pocket-sized chef aims high. Chef Audrey Chin first began her career in banqueting, which involved catering to a large number of people at the same time, but then decided to move into the fine dining industry to take on new challenges and to learn to create more personalised, individual dishes in a la carte menus with intriguing new ingredients.

She professes a love for cooking seafood related dishes, a preference evident in her Festival Menu this year, and names her style as classic European with inspiration drawn from French, Italian, and even Norwegian cooking, courtesy of her former Swedish colleague. Many are often surprised that the impressive talent behind the colourful, artistic delicacies of Graze is a local instead of some big-name foreign talent, a testament to the universal depth of her culinary abilities.

Citing a desire to preserve the essential 'classic' style of the European influences in her offerings this year, she nevertheless still intends to 'spice' things up a little with some changes in presentation and taste for the MIGF crowd. They say that big things come in small packages - and there can be no better proof than Chef Audrey Chin!
