Always seeking new ways to redefine and present his dishes, Chef Paolo’s passion for food has ever been the driving force behind this talented and refined Italian chef.

His 32 years of experience have taken him around the world, with successful stints at The O&O Royal Mirage Hotel in Dubai, The Imperial Hotel in New Delhi, The Goodwood Park Hotel in Singapore, The Four Seasons Hotel and the Hilton in Tokyo, and most recently as Executive Chef at Ma Joly Restaurant & Lounge, The Sandi Phala Manikam Hotel & Resort, Bali.

A theme running throughout his repertoire of dishes is the desire to maintain his classical Italian heritage, the recipes and flavours he grew up with, but at the same time trying to put a spin on these classics and inject a fresh, modern edge to the proceedings.

His menu this year includes a slow roasted veal rump appetizer, with pickled vegetables and capers, served with a tuna sauce - a perfect example of a classic dish that combines both old and new world characteristics, with the addition of the tuna element.
