Kedah born, Chef Shan, has never compromised when it comes to food preparation. “As far as possible, I prefer to prepare everything from scratch. Instant product is strictly band in my kitchen,” he says. Focusing on spa cuisine now with The Pomelo, chef Shan offers his expertise in incorporating medicinal values of herbs into beautiful dishes.
The chef who has strong Italian cuisine knowledge base sees MIGF as a challenge to improve himself and also a very good opportunity to meet other chefs.
