His creations are a lesson in artful presentation. Chef Lam’s favorite past time is fishing and he travels far and wide to get the most out of his travels.
He applies the same ideology when sourcing ingredients and makes no compromises to acquire the freshest local seafood and other produce.
He looks forward to MIGF every year as it gives him the opportunity to meet new chefs and see new dishes from across the board.
