Chef Leong has been working in Grand Millennium Kuala Lumpur for two years and prior to that he had been working for The Regent Kuala Lumpur for 18 years. Chef Leong started of as a steamer in The Regent Kuala Lumpur 20 years ago and has since worked with many renowned chefs such as Chef Chan Kwok, Chef Choy Wai Kee and Chef Frankie Woo, undoubtedly picking up many skills from them. Chef Leong's best handled ingredient is of course, fish. As he favours fish himself, he has tried many different types of cooking method and succeeded in coming out with very innovative fish dishes.
Among the guests' favourites and also one of Zing's specialities is the Baked Cod Fish wrapped with Filo Pastry. Chef Leong has adapted a healthy way of cooking as health is the main concern for everyone and it has turned into a trend at Zing. His motto is 'less salt, less sugar and less oil'. Chef Leong believes that great dishes can be churned out by cooking with his heart, and that passion for his work (and the wok) and the freshness of ingredients also contributes to a great meal.
