One of the true veterans of MIGF, Chef Lam Hock Hin has over the years delighted many with his cutting edge blend of Chinese ingredients coupled with superior artistic presentation. Chef Lam's fifth successive year sees the popular personality hoping to emulate his 2008 conquest, which culminated in a 'Chef Congeniality Award,' nominated by his fellow brethren. "I actually had to look in the dictionary to find the definition of 'congeniality' when I got home!" he shared in amusement.
Many gourmet food enthusiasts eagerly await the latest instalment of Chef Lam's Festival menu and early signs hint they won't be disappointed. "I have been experimenting with durian. It has such a distinct and interesting flavour I find interesting to work with", he said with a smile. "Quite popular with my regular customers too!" he added.
