Chef Shanmuganathan is at the helm of the Avanti Italian-American kitchen, with a passion to keep taste buds pleasantly surprised and contented. Fondly called Chef Shan, the Sous Chef deftly marries traditional Italian favourites with contemporary tastes, resulting in time-honoured recipes bearing novel flavours and modern presentations.

Chef Shan is adamant about using only the freshest and finest quality ingredients, strictly adhering to his belief and practice that only ingredients of accurate quantity and prepared meticulously, result in the desired taste and quality of food. “It’s all about freshness with a strong sense of harmony in taste, aroma and style. And this is particularly true of Avanti’s Italian-American cuisine that marries two very distinct types of foods with an interesting balance,” he reiterates.
