Nestled in a highlands getaway, The Olive is a chic and modern yet cosy, fine dining restaurant serving Continental cuisine. Patrons will be spoilt for choice with The Olive’s extensive menu offering the textures and flavours of classical and fusion recipes with a contemporary twist, evident in the restaurant’s excellent signature dishes, such as its Roasted Chilean Seabass, Wagyu Beef, gourmet pizzas and delicious desserts. The Olive Bar, adjoining the main dining area, has a fine selection of wines and liquors and has the perfect atmosphere to relax and wind down after a delicious meal.

THE CHEF
Executive Sous Chef Oliver Lopez began his training in the culinary arts in the kitchens of Genting Highlands in 1983, where he now oversees all the restaurants at Genting Hotel. Born and bred in the Portuguese settlement in Melaka, Chef Oliver cites his mother’s excellent Cristang cooking as one of the reasons for his attraction to his metier. Specialising in French and Italian cuisine, this affable chef has been at The Olive since its inception, and has been involved in developing and applying his extensive culinary experience to Genting’s many restaurants. “Being a chef is a passion; it involves sacrifice—either you’ve got the drive, or you don’t,” the chef says. “It doesn’t take just skill to be a good chef; a lot of things are involved. It is mostly sheer hard work, coupled with creativity.”
