| The undulating reflections of light on water; steam gently rising from the dim sum stations and massive cast aluminium zhou vessels. Impressions of wood, metal, glass and fire greet you as you enter EEST and embark on a voyage of culinary discovery, featuring an exquisite array of Japanese, Vietnamese, Chinese, Thai and Malaysian cuisines, prepared with authentic recipes and presented with an innovative twist. EEST’s unique ambience furnished with hand-carved tables, abaca seating and volcanic ash floorsis the manifestation of Asian craft articulated in Western neo-minimalism. The friendly staff provides attentive yet discreet service, and five open kitchens offer diners “live food shows” showcasing the exquisite cuisine. |

THE CHEF
Chef de Cuisine of EEST, Lai “Kuan” Geo was born into a family of connoisseurs of good food, willing to travel hours to savour the best.
Starting his training in Malaysia and Amsterdam, the gregarious Chef Kuan travelled around Europe in his quest to master the culinary arts. “During my travels, I discovered the beauty of different cultures through their cuisines,” he says thoughtfully, “I have an urge to travel and taste food at their point of origin.” At the tender age of 21, he moved to South Africa, and at 23 was involved in opening an Asian restaurant in Cape Town. Chef Kuan is flexible and capable of taking care of not only the food, but every aspect of the dining experience.
