THE CHEF
Mandarin Oriental, Kuala Lumpur’s Executive Chef Marcel Kofler represents Pacifica this year in the MIGF. Chef Marcel, who comes from Switzerland, was trained in French Classical cuisine, and has travelled around the world while working on a cruise ship for 7 years. He always tries to use ingredients that are in season, when they are at their best and freshest.
Describing his cuisine as traditional, with international influences, Chef Marcel’s signature style is light and healthy, striving for the right balance of flavours in every dish. “Malaysia has a lot to offer in terms of food,” Chef Marcel says. “As chefs, we can work together to create exciting fusions.”
